Inclusion means more than just being placed withother kids. It is not a place or time spent with others. It has different meanings to different people. There is a unique definition of inclusion for each person, but overall it means belonging.

Where do you go when you want the real thing, not the dollar menu on the run? Make it local…make it sloppy, make it delicious, make it out of your preferred source of protein- whatever makes you really happy- we want to know!

Over the Summer I have been thinking about ways I could give the family a mid-week break without breaking my budget. After all, I often hear about ideas for “Budget Dates” for couples. What about when you have a few more personalities in the house? You need a little fun for the kids and a little R&R for the grown ups- but it’s one of those weeks where a trip to the movies just isn’t in the equation.
So, here is one of my family’s favorite dates. We enjoy going on a “tadpole adventure” at 5-Mile with a picnic dinner. Alright, maybe it’s not terribly original- but it is a great spot and in the evenings it is a quiet nook. If we are lucky we might end up with free pets! We call that science at my house- (we also call them temporary guests.)
If I think ahead, the kids and I go to Farmers Market in the morning to pick up a variety of veggies and fruit (cucumber $.33 at the farmers market last week!) Otherwise, we just raid the garden and see what we can come up with. This week the peaches look good, our tomatoes are ready and the oregano is so fragrant!
I usually have tortillas, peanut butter and bananas on hand so that is quick and fun for the kids to whip together. For the grown ups, hummus wraps are refreshing in the Chico heat. What goes in them depends largely on what treasures I raided from the garden or purchased at the Farmer’s Market. If I have the few essential ingredients I can throw together some hummus in the processor. If not, there are yummy hummus selections down at the corner store.
Then I am ready to throw a few cold drinks in a cooler with my tomato salad, wraps, and fruit. I bring along my old Mexican picnic blanket to throw on the rocky creek bed or a couple of chairs. Don’t forget the towels for the one who will inevitably “slip” in the creek, and a bucket for the kids temporary “pets.”
The kids can happily frolic on their tadpole hunt while the hubby and I unwind a bit and enjoy the evening with our feet in the creek. It is a beautiful spot, so be sure you “pack out what you pack in” as they say, and avoid bringing in glass with the rocks and all. It is also good to know that there is a nice restroom there- always something moms like to check out beforehand.

Hummus roll recipe
“Need an easy Summer appetizer? Hummus is a flavorful tortilla filling or veggie dip.”
INGREDIENTS:
1 (15.5 ounce) can garbanzo beans or chickpeas, drained- but reserve the liquid
1t. minced or 1 fresh clove garlic
1t. cilantro leaves
2T. tahini (ground sesame)
2T lemon juice
3T olive oil
¼ t. cayenne pepper
¼ t.cumin
1/8 t. coriander
Salt and pepper to taste
Additional zingers for your own variation:
roasted red peppers, pitted kalamata olives, fresh basil, roasted garlic, or sundried tomatoes packed in oil
Hummus flavors blend well if left for a few hours or overnight in the fridge.
DIRECTIONS:
First put your clove of garlic in the bowl of the processor or blender and pulse until minced, then add drained garbanzo beans in the bowl and blend, then add all other ingredients. Cover and process until smooth.
If you want a smoother hummus gradually add 1-2T of reserved garbanzo liquid Refrigerate hummus until you are ready to use, keeps for a good 6 days or so.
Spread a layer of hummus on a tortilla, then layer mixed greens, spinach, bell peppers and sliced cucumber. Roll it all together and you have a wonderful Summer wrap perfect for a picnic at the creek!
